I am appearing for both UP PCS and UP Subordinate Services simultaneously. Which exam should I focus more on? What are the key differences in difficulty and posting quality? Has anyone appeared for both in the same year successfully?

Prepare for PCS as the primary target — Subordinate Services largely shares the Prelims syllabus, so you get it almost for free. PCS posts (SDM/DSP) have much better growth than subordinate posts. Filling both forms in the same year is common and sensible.
Just watch the exam-date clashes — in some years Subordinate and PCS mains overlap. Decide your priority before the cycle starts.
