I am a Maharashtra student targeting both MPSC and UPSC. With overlapping syllabi, which should I prioritize? Is MPSC easier or harder than UPSC? Which gives better job security and growth in Maharashtra — MPSC IAS cadre or state services?

If your dream is IAS, UPSC stays primary and MPSC is the strong backup with ~70% syllabus overlap. MPSC is somewhat easier than UPSC and gives excellent Maharashtra-cadre posts (Dy. Collector/DySP) with great job security. Many Maharashtra aspirants prep UPSC-first and convert MPSC along the way.
Just budget separate time for the Maharashtra-specific GK and the Marathi paper — those do not come from the UPSC grind.
